In North China, the whole family come together on Chinese New Year's Eve to make jiaozi. This symbolizes family unity. Jiaozi dough, made of flour and cold water, is rolled into small discs, with the centre slightly thicker than the edges. The filling, either of meat and vegetables, or just vegetables, is placed in the middle of the disc. This is then folded in half and the edges pressed together, forming a crescent shape. Jiaozi are boiled in water, steamed or fried. |
